PATTY CAKES
Ingredients
3 tablespoons butter 1
cup of self raising flour
1 egg ¼
teaspoon vanilla
pinch salt ¼
cup milk
Method
Beat butter and sugar to a cream
Add lightly beaten egg and vanilla. Beat well.
Stir flour and salt together.
Fold in dry ingredients alternately with milk and mix well.
Drop heaped teaspoonfuls of mixture into well-greased patty tins
or papers.
Bake in a moderate oven for 10 to 15 minutes.
Cool on a wire rack.
Ice with butter icing
